Why does tea dry faster than coffee on my spoon?

Question: Why does tea dry faster than coffee on my spoon?

If I wait a few seconds the spoon is dry enough for the sugar to slide straight off without leaving any stuck to the spoon, but anything other than tea takes ages... (this is before milk goes in) I have only 1 explanation could it be the high levels of antioxidants in tea? I really don't know, and neither does google so... :)
