Reliable espresso information
I need the best but most reasonable espresso maker.?
having lived in miami most of my life....tears can form thinking about the smell and taste of a coffee Cubano. a sweet rich foam on top and a cold glass of water to rinse. most machines are micky mouse. i now live in connecticut and a good cup of coffee...i have not seen it and don't say starbucks. right off the plane ..i am at a cuban cafe......in the usa..miami makes the best espresso.
Question about how to make espressos using domestic machines?
1, if i want to make a standard double Espresso do i need to put 2 scoops of coffee into the basket. 2, i have glanced at espresso machine manuals and a lot of them appear to be manual machines ie you have to tell the machine when to stop when making my espressos is the a rough standard time that i need to memorize or will it stop automatically also when making my espresso's do i need to look for the crema as the guide as to when i should stop the machine. 3, when grinding the coffee does it have to be fine, my reason for asking is costa coffee grind theirs to a medium consistency from what they said, also if it was under or overground how would this affect the coffee

Nera espresso machines?
We are opening a cafe deli and are in the process of deciding which commercial 2 group espresso machine to select. We are going to hire the machine instead of purchasing it outright but the rental companies in the UK do not have a huge selection of machines to choose from. I am aware that places like Starbucks can charge anywhere from .50 to .70 cents for an extra shot, or upwards of $2.00 for a single shot that you plan to put milk in, but how much does it cost the shop to produce that shot?
How to fix Pasquini Moka espresso grinder?

I just purchased a Delonghi EC155 and most of the reviews say it is a great entry level espresso machine. I just started playing around with it and experimenting to pull a good shot of espresso. I am no coffee espresso expert so I don't know what a perfect espresso should be like. I know that I enjoy them when I get them from a coffee shop but I don't get it often enough to know what a perfect shot should be like. I am grinding my own beans fine grind and tamping with a decent amount of pressure. My crema turns out with a bit of fine ground beans in it. Is this normal or is this considered a bad shot? Perhaps my grind is a bit too fine? My shots are coming out a bit light so I am tamping harder and trying to keep the grind fine to increase the brew time.Anyone have specific tips on using this particular machine as well?
