For what I know, tamping is being done to be able to compress the espresso grounds in a container so that when the pressurized hot water passes through the grounds, you will be able to extract all the oils and flavor of the espresso. It has to be compact to provide maximum flavor. I wish there was a espresso coffee maker portable so that I could also have espresso in my field office while I do field work. Hope this helps.
